Mexican Veggie Burger, Rice & Beans


Here's an easy recipe to satisfy those Mexican cravings without the guilt! It's a perfect single serving dish that will keep those New-Years resolution meals on the light side.

1 veggie burger(any Morningstar)
or 2/3 Morningstar crumbles
or 2/3 ground turkey
2 Tbsp. Onion (Frozen)
1/4 tsp. Cumin
1/2 c cooked brown rice
1/2 c black beans
1/2 c frozen corn
1/4 Avocado
3 Tbsp. Salsa

Saute onion, cumin and crumbles(frozen)or add in cooked chopped veggie burger/ground turkey until cooked through and onions are caramelized. In another bowl heat together brown rice, black beans and frozen rice in microwave for approx 1min 30 sec. Place rice mixture on plate and top with cooked crumbles & onion. Spread salsa and avocado onto and enjoy! Approx. 400 calories.
